A couple of terms to know before you read further:
Live weight is the weight of the beef animal as it walks across a scale before processing. This include the weight of bones, organs, head, feet, etc.
Hang weight (or "weight on the rail") is the weight of the animal once it has been killed, cleaned, and hung to age. The head and feet have been removed, but hang weight does includes bones and fat. You can expect about 53-62% yield (57% average) from live to hang weight.
Finish weight is the final weight of the finished, packaged meat the customer takes home. You can expect about 53-62% yield (57% average) from hang to finish weight.

Bulk beef is the most economical way to source quality animal proteins!
So how does this work? We require a $500 deposit for a whole beef and a $250 deposit for a half beef. We then deliver the animal to the butcher shop, and you pay us for the hanging weight of that animal (less the deposit), priced at $4.50/lb.
You are responsible for communicating custom cutting instructions to the butcher, paying for processing (price is based on hang weight), and picking up your packaged meat. After slaughter, the beef will be aged for approximately 10-14 days before final processing, and you can typically pick up your beef 12-16 days after its slaughter date.
We have used both Noble County Meats in Perry, OK, and Country Home Meats in Edmond, OK, and have been pleased with the quality & customer service from both processors.
All told, customers pay no more than $10.24-10.28/lb of packaged meat–that’s for ALL basic cuts–steaks, roasts, ground, & filets included!

PROCESSING PRICING
Noble County Meats: $85 kill fee + $1.00/lb processing fee (based on hanging wt)
Country Home Meats: $100 kill fee + $1.05/lb processing fee (based on hanging wt)
*There are additional small fees for things like pre-made hamburger patties, stew meat, etc., but you as the customer have control of your cutting instructions! Refer to your preferred processor’s website for up-to-date processing info & more specifics.
TOTAL COST BREAKDOWN
Example: If a steer weighs 600 lbs live, its carcass will weigh approximately 342 lbs hanging and will yield approximately 195 lbs of packaged meat. So, for this example animal, total cost of a whole beef is:

animal price (342 lbs x $4.50 = $1,539) + processing cost ($85 kill fee + $342 basic processing fee) = $1966
Country Home Meats:
animal price (342 lbs x $4.50 = $1,539) + processing cost ($100 kill fee + $359.10 basic processing fee) = $1998.10
