Bios Chicken Breakfast Sausage

This sausage is savory and lean. It's a nutritious and easy addition to any breakfast!
What you'll need:
- 1 pound of Ground Bios Chicken
- 2 tablespoons maple syrup or honey
- 1 ½ teaspoon kosher salt
- 1 teaspoon dried sage
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg
- 1 tablespoons extra-virgin olive oil or avocado oil
In a bowl, mix ground chicken, syrup or honey, and all seasonings. This is easiest to do with your hands. You can then form the mixture into balls to make sausage patties.
Heat oil in a pan (we prefer an old-school cast iron) at medium-high heat. Drop sausage balls into the hot oil and flatten with your fingers or a spatula. Cook patties for 2-3 minutes per side, until desired browning is achieved.
Another option is to brown the sausage as sausage crumbles. We particularly like to do this to add to "chicken gravy" to eat over homemade biscuits!
